Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil (1 tbsp for sweet potatoes, 1 tbsp for chicken)
  • 0.5 tsp paprika
  • 0.75 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 cups cooked white or brown rice
  • 0.5 cup plain Greek yogurt or mayonnaise
  • 1 tbsp lime juice
  • 1 tsp sriracha
  • 0.5 tsp cumin
  • 0.5 tsp paprika
  • 1 cup steamed or sautéed green vegetables (spinach or broccoli)
  • Cilantro or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, salt, and black pepper.
  3. Spread them on a baking sheet and roast in the oven for 20-25 minutes, flipping halfway, until tender.
  4. In a skillet over medium-high heat, heat the remaining tablespoon of olive oil. Season the chicken with garlic powder, onion powder, salt, and pepper, and cook until golden and cooked through, around 5-7 minutes.
  5. In a separate bowl, whisk together the Greek yogurt (or mayonnaise), lime juice, sriracha, cumin, paprika, optional cayenne, and salt until smooth.
  6. If you haven’t cooked your rice yet, prepare it now, along with your green vegetables.
  7. To serve, divide cooked rice into bowls and top with roasted sweet potatoes, pan-seared chicken, and green vegetables.
  8. Drizzle generously with the creamy spiced sauce and garnish with chopped cilantro or parsley.

Notes

You can customize the ingredients based on what you have in your kitchen. For added flavor, consider marinating the chicken in spices for 30 minutes before cooking.
