- 2 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil, divided
- 0.5 tsp paprika, plus a pinch for the sauce
- 0.75 tsp garlic powder, divided
- Salt and black pepper, to taste
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 0.5 tsp onion powder
- 2 cups cooked white or brown rice
- 0.5 cup Greek yogurt (or mayonnaise)
- 1 tbsp lime juice
- 1 tsp sriracha (or to taste)
- 0.5 tsp cumin
- Pinch of cayenne pepper (optional)
- 1 cup steamed or sautéed green vegetables (such as spinach or broccoli)
- Fresh cilantro or parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the cubed sweet potatoes with 1 tbsp of olive oil, paprika, 0.5 tsp garlic powder, salt, and pepper. Spread them out on a baking sheet.
- Roast the sweet potatoes for 20-25 minutes, flipping them halfway, until they’re tender and caramelized.
- While the sweet potatoes roast, season the chicken cubes with 0.5 tsp garlic powder, onion powder, salt, and pepper.
- Heat 1 tbsp of olive oil in a skillet over medium-high heat and cook the seasoned chicken for 5-7 minutes, stirring occasionally until golden and cooked through.
- In a separate bowl, whisk together the Greek yogurt (or mayonnaise), lime juice, sriracha, cumin, paprika, optional cayenne, and a pinch of salt until smooth and thick.
- Prepare your rice and steam or sauté your choice of green vegetables while the sweet potatoes and chicken are cooking.
- Once everything is ready, divide the cooked rice among bowls. Top with roasted sweet potatoes, pan-seared chicken, and green vegetables.
- Generously drizzle with the creamy spiced sauce, and garnish with fresh cilantro or parsley.
- Serve immediately and enjoy!
Notes
Feel free to swap Greek yogurt with mayonnaise for a creamier sauce. Store leftovers in an airtight container in the fridge for up to 3-4 days.
