- 10 oz frozen steam-in-bag cauliflower rice
- 4 cups cooked shredded chicken
- 6 slices bacon (fried until crispy, crumbled)
- 4 oz cream cheese
- ½ cup sour cream
- 1 packet ranch dressing seasoning
- 2 cups shredded cheddar cheese
- Chopped parsley for garnish
Instructions
- Steam the cauliflower rice according to package instructions and set it aside.
- Fry the bacon until crispy, drain it on paper towels, then crumble it and set aside.
- In a large skillet over medium heat, melt the cream cheese and sour cream together, stirring until smooth.
- Add ranch dressing seasoning and shredded cheddar cheese to the skillet; stir until melted and well combined.
- Add shredded chicken and steamed cauliflower rice to the creamy sauce, tossing to coat. Mix in half of the crumbled bacon.
- Cook until the mixture is heated throughout.
- Divide into bowls, topping each with remaining crumbled bacon and chopped parsley.
Notes
For a dairy-free version, substitute with dairy-free cream cheese and sour cream. Customize toppings for extra flavor.
