Ingredients

  • 10 oz frozen steam-in-bag cauliflower rice
  • 4 cups cooked shredded chicken
  • 6 slices bacon (fried until crispy, crumbled)
  • 4 oz cream cheese
  • ½ cup sour cream
  • 1 packet ranch dressing seasoning
  • 2 cups shredded cheddar cheese
  • Chopped parsley for garnish

Instructions

  1. Steam the cauliflower rice according to package instructions and set it aside.
  2. Fry the bacon until crispy, drain it on paper towels, then crumble it and set aside.
  3. In a large skillet over medium heat, melt the cream cheese and sour cream together, stirring until smooth.
  4. Add ranch dressing seasoning and shredded cheddar cheese to the skillet; stir until melted and well combined.
  5. Add shredded chicken and steamed cauliflower rice to the creamy sauce, tossing to coat. Mix in half of the crumbled bacon.
  6. Cook until the mixture is heated throughout.
  7. Divide into bowls, topping each with remaining crumbled bacon and chopped parsley.

Notes

For a dairy-free version, substitute with dairy-free cream cheese and sour cream. Customize toppings for extra flavor.
