A quick and indulgent dish combining chicken, crispy bacon, and creamy ranch seasoning tossed with pasta.


Ingredients

  • 2 cups cheddar cheese, shredded
  • 6 strips of bacon
  • Salt and pepper to taste
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 small boneless skinless chicken breasts
  • 2 cups uncooked rotini pasta (or your favorite type)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 tablespoon minced garlic
  • 2 cups half and half
  • 2 tablespoons dry ranch dressing seasoning mix

Instructions

  1. In a large skillet over low heat, fry the bacon until crispy. Set aside while reserving the drippings in the pan.
  2. Slice the chicken breasts into thinner strips. Season with salt, pepper, onion powder, and Italian seasoning. Sear in the bacon drippings over medium-high heat until golden and cooked through. Let rest, then cube.
  3. Cook the rotini in a pot of boiling salted water until al dente, then drain.
  4. In the same skillet, melt the butter and sauté the minced garlic. Stir in the flour to create a roux, then slowly pour in the half and half while continuously stirring. Add the ranch seasoning and cheese, mixing until smooth and creamy.
  5. Add the drained pasta to the sauce, fold in the chicken, and garnish with crispy bacon. Serve warm.

Notes

Consider crisping the bacon in the oven for even cooking, and try different types of cheese for variety. Fresh herbs can enhance the flavor before serving.
