Ingredients

  • 1 cup broccoli florets
  • 1 cup cauliflower rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, broccoli, cauliflower rice, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Mix the cream and chicken broth together in a separate bowl until well combined.
  4. Pour the cream mixture over the chicken and vegetable mix, stirring well to ensure everything is evenly coated.
  5. Transfer the mixture into a greased casserole dish and top with the shredded cheese.
  6. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  7. Let it cool for a few minutes before serving.

Notes

For a low-carb version, replace cauliflower rice with more veggies. Feel free to add spices or different toppings based on preference.
