Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Cook the lo mein noodles per package instructions until al dente, then drain and set aside.
  2. In a large skillet or wok over medium-high heat, drizzle with oil and sauté the chicken breasts for about 6-8 minutes, until golden brown and fully cooked. Remove from skillet and set aside.
  3. In the same pan, stir-fry the red and yellow bell peppers, carrots, and green onions for about 3-4 minutes until tender yet still crisp.
  4. Return the cooked chicken to the skillet. Add the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss until well mixed and heated through.
  5. Serve hot, with extra soy sauce on the side if desired.

Notes

For best results, cook the noodles al dente and ensure chicken and vegetable pieces are uniform in size. This dish can be customized with different proteins or vegetables.
