Chicken Lo Mein

  • Total Time: 25 minutes
  • Yield: 4 servings 1x
  • Diet: Poultry

Description

A quick and delicious Chicken Lo Mein featuring tender chicken, colorful vegetables, and savory noodles.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Gather all your ingredients and cut your vegetables into bite-sized pieces.
  2. Cook your Lo Mein noodles according to the package instructions until al dente. Drain and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add sesame oil and sauté your chicken until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet.
  4. In the same skillet, stir-fry the bell peppers, carrots, and green onions until tender yet crisp, around 3-4 minutes.
  5. Return the chicken to the skillet, and toss in the cooked noodles. Add soy sauce, garlic, and any additional spices. Mix everything until well combined.
  6. Serve hot with extra soy sauce if desired.

Notes

Feel free to swap other veggies like broccoli, snap peas, or mushrooms based on your preference.
