Ingredients

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Prepare the Lo Mein noodles according to package instructions. Once they’re al dente, drain and set aside.
  2. In a large skillet or wok, heat some sesame oil over medium-high heat. Add the chicken and sauté for about 6-8 minutes until golden brown and fully cooked. Remove the chicken from the skillet.
  3. In the same skillet, add a bit more oil if necessary. Toss in the chopped bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes, ensuring they remain tender-crisp.
  4. Bring the cooked chicken back into the pan with the vegetables. Add the Lo Mein noodles, soy sauce, minced garlic, and any desired spices. Toss everything together until well coated.
  5. Dish out the Chicken Lo Mein while it’s hot, and if you like, offer extra soy sauce on the side for those who want a little more flavor.
