- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Prepare the Lo Mein noodles according to package instructions. Once they’re al dente, drain and set aside.
- In a large skillet or wok, heat some sesame oil over medium-high heat. Add the chicken and sauté for about 6-8 minutes until golden brown and fully cooked. Remove the chicken from the skillet.
- In the same skillet, add a bit more oil if necessary. Toss in the chopped bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes, ensuring they remain tender-crisp.
- Bring the cooked chicken back into the pan with the vegetables. Add the Lo Mein noodles, soy sauce, minced garlic, and any desired spices. Toss everything together until well coated.
- Dish out the Chicken Lo Mein while it’s hot, and if you like, offer extra soy sauce on the side for those who want a little more flavor.
