- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Cook the Noodles: Acquaint yourself with the package instructions for the Lo Mein noodles. Boil until al dente, then drain and set aside.
- Sauté the Chicken: Heat a large skillet or wok over medium-high heat. Add a drizzle of sesame oil, then toss in the chicken pieces. Cook until they become golden brown and are cooked through, which should take around 6-8 minutes. Once done, remove the chicken from the skillet.
- Stir-Fry the Vegetables: In the same skillet, add the bell peppers, sliced carrots, and chopped green onions. Stir-fry for about 3-4 minutes until they’re tender yet crisp.
- Combine Ingredients: Return the cooked chicken to the skillet. Add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well mixed and heated through.
- Serve: Serve hot, with extra soy sauce on the side if desired.
Notes
For a vegetarian version, substitute chicken with tofu or tempeh.
