Ingredients

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Cook the Noodles: Acquaint yourself with the package instructions for the Lo Mein noodles. Boil until al dente, then drain and set aside.
  2. Sauté the Chicken: Heat a large skillet or wok over medium-high heat. Add a drizzle of sesame oil, then toss in the chicken pieces. Cook until they become golden brown and are cooked through, which should take around 6-8 minutes. Once done, remove the chicken from the skillet.
  3. Stir-Fry the Vegetables: In the same skillet, add the bell peppers, sliced carrots, and chopped green onions. Stir-fry for about 3-4 minutes until they’re tender yet crisp.
  4. Combine Ingredients: Return the cooked chicken to the skillet. Add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well mixed and heated through.
  5. Serve: Serve hot, with extra soy sauce on the side if desired.

For a vegetarian version, substitute chicken with tofu or tempeh.
