- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Prep the Ingredients: Start by chopping all your vegetables into bite-sized pieces and mincing the garlic.
- Cook the Noodles: In a pot of boiling water, prepare your lo mein noodles according to the package instructions until they’re al dente. Once done, drain and set aside.
- Sauté the Chicken: Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken breasts until golden brown and cooked through, about 6-8 minutes. Once ready, remove the chicken and set it aside.
- Stir-Fry the Veggies: In the same skillet, toss in the bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes, or until they’re tender yet still crisp.
- Combine and Flavor: Return the chicken to the skillet, add the cooked lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well combined and heated through.
- Serve: Serve hot, and if desired, offer extra soy sauce for those who crave a little more flavor.
Notes
For a vegetarian option, substitute chicken with tofu and add your favorite vegetables. Store leftovers in an airtight container in the refrigerator for up to three days.
