- 1 cup mushrooms, sliced
- 1 cup Marsala wine
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 2 tablespoons butter

- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken: Sprinkle salt and pepper generously on both sides of the chicken breasts.
- Sear the chicken: In a large skillet, heat olive oil and butter over medium heat. Add the chicken and cook until golden brown on both sides, about 6-7 minutes per side. Once cooked, remove and set aside.
- Sauté mushrooms: In the same skillet, add sliced mushrooms and sauté until they are golden and tender.
- Deglaze the pan: Pour in the Marsala wine, scraping up any brown bits from the bottom. Let it simmer for a few minutes to cook off the alcohol.
- Make the sauce: Add in the chicken broth and heavy cream, mixing well, and let the sauce reduce for about 5 minutes.
- Combine: Return the chicken to the skillet, coating it in the sauce. Simmer for an additional 2-3 minutes to meld the flavors.
- Garnish and serve: Finally, garnish with fresh parsley before serving.

For a lighter version, substitute heavy cream with half-and-half or use vegetable broth for a meat-free alternative.
