  • 1 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream

  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken: Sprinkle salt and pepper generously on both sides of the chicken breasts.
  2. Sear the chicken: In a large skillet, heat olive oil and butter over medium heat. Add the chicken and cook until golden brown on both sides, about 6-7 minutes per side. Once cooked, remove and set aside.
  3. Sauté mushrooms: In the same skillet, add sliced mushrooms and sauté until they are golden and tender.
  4. Deglaze the pan: Pour in the Marsala wine, scraping up any brown bits from the bottom. Let it simmer for a few minutes to cook off the alcohol.
  5. Make the sauce: Add in the chicken broth and heavy cream, mixing well, and let the sauce reduce for about 5 minutes.
  6. Combine: Return the chicken to the skillet, coating it in the sauce. Simmer for an additional 2-3 minutes to meld the flavors.
  7. Garnish and serve: Finally, garnish with fresh parsley before serving.
