- 1 onion, chopped

Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Season the chicken thighs generously with salt. Brown the chicken for about 5 minutes on each side until golden.
- Remove the chicken from the skillet and set aside on a plate.
- Add the chopped onion and minced garlic to the same skillet. Sauté until the onion is fragrant and translucent.
- Pour in the chicken broth and mole sauce, stirring to combine everything smoothly.
- Return the browned chicken to the skillet, then reduce the heat to low.
- Cover the skillet and let it simmer for 30-40 minutes, or until the chicken is cooked through and tender.
- Serve hot, garnished with fresh cilantro, alongside cooked rice or warm tortillas.
Notes
