Description
A comforting and hearty Chicken Potato Soup filled with tender pieces of chicken, creamy potatoes, and crispy bacon, perfect for chilly evenings.
Ingredients
Scale
- 2 cups cooked chicken, shredded
- 4 potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup bacon, cooked and crumbled
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: Chopped parsley for garnish
Instructions
- In a large pot over medium heat, cook the bacon until crispy. Remove it from the pot and set aside, but leave some bacon fat for flavor.
- Add the chopped onion, diced carrots, and celery to the pot. Sauté until they soften, about 5-7 minutes.
- Toss in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a gentle simmer.
- Add the diced potatoes and continue cooking for about 10-15 minutes, or until they’re tender.
- Stir in the shredded chicken and heavy cream, letting everything heat through.
- Season with salt and pepper to your liking.
- Serve hot, garnished with the crumbled bacon and a sprinkle of parsley if desired.
Notes
For a deeper flavor, consider adding herbs like thyme or rosemary during the simmering phase. For a healthier twist, substitute half-and-half for heavy cream, or use a dairy-free cream to keep it plant-based.
