Description

Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 cup adobo sauce
  • 1/4 cup fresh lime juice
  • Salt and pepper to taste
  • Tortillas (for serving)
  • Fresh cilantro (for garnish)

Instructions

  1. Combine chicken thighs, chopped onion, garlic, oregano, cumin, and adobo sauce in a large pot.
  2. Add enough water to cover the chicken and bring it to a boil.
  3. Once boiling, reduce the heat and let it simmer for 20-25 minutes, or until the chicken is fully cooked.
  4. Remove the chicken and shred it with two forks.
  5. Return the shredded chicken to the pot, add lime juice, and season with salt and pepper.
  6. Let it simmer for an additional 5-10 minutes for the flavors to meld beautifully.
