- 1 onion, chopped
- 3 cloves garlic, minced

- 1/2 cup adobo sauce
- 1/4 cup fresh lime juice
- Salt and pepper to taste
- Tortillas (for serving)
- Fresh cilantro (for garnish)
Instructions
- Combine chicken thighs, chopped onion, garlic, oregano, cumin, and adobo sauce in a large pot.
- Add enough water to cover the chicken and bring it to a boil.
- Once boiling, reduce the heat and let it simmer for 20-25 minutes, or until the chicken is fully cooked.
- Remove the chicken and shred it with two forks.
- Return the shredded chicken to the pot, add lime juice, and season with salt and pepper.
- Let it simmer for an additional 5-10 minutes for the flavors to meld beautifully.
Notes
For extra flavor, consider marinating the chicken in adobo sauce for a few hours before cooking.
