A quick and nutritious chicken zucchini stir fry, perfect for busy weeknights.
Ingredients

- 2 chicken breasts, sliced
- 2 zucchini, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: red pepper flakes for heat
- Optional: sesame seeds for garnish
Instructions
- Heat the olive oil in a large pan over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Toss in the sliced chicken breasts. Cook them until they turn golden and are no longer pink, about 5-7 minutes.
- Next, add the sliced zucchini into the pan. Stir-fry together with the chicken for an additional 5 minutes.
- Pour in the soy sauce and mix well, seasoning with salt, pepper, and red pepper flakes if desired.
- Continue cooking for another 2 minutes until the zucchini is tender but still crisp.
- Serve hot and sprinkle with sesame seeds for garnish, if you like!
Notes
Can be enjoyed on its own or served with rice, quinoa, or noodles. Feel free to swap chicken for other proteins or zucchini for other veggies.
