Ingredients

- 2 grilled chicken breasts (seasoned with salt and pepper)
- 1 cup cooked rice
- 1 cup black beans (drained and rinsed)
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup corn
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
Instructions
- Season the grilled chicken breasts with salt and pepper, then slice them into strips.
- Warm the tortillas in a skillet or microwave until pliable.
- Lay each tortilla out and layer the rice, black beans, grilled chicken, diced tomatoes, shredded lettuce, and corn.
- Drizzle with chipotle ranch dressing.
- Fold the sides of each tortilla over the filling, then roll it up from the bottom.
- Serve immediately, or with extra dressing on the side if desired.
Notes
Wrap leftovers in foil and store in an airtight container in the fridge for up to three days, or freeze for up to two months.
