Delightful and simple to make, these Chocolate Meringue Cookies feature a crisp exterior and a soft, chewy center with hints of chocolate sweetness.

Ingredients

Scale
  • 2 large egg whites
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a clean, dry mixing bowl, beat the egg whites until foamy.
  3. Add cream of tartar and continue to beat until soft peaks form.
  4. Gradually add the granulated sugar, one tablespoon at a time, and beat until stiff peaks form.
  5. Fold in the vanilla extract and chocolate chips gently.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake in the preheated oven for 1 hour, then turn off the oven and let the cookies sit inside for at least another hour.
  8. Remove from the oven and let cool completely before serving.

Notes

Ensure that mixing equipment is clean and dry to achieve perfect meringue. Store in an airtight container at room temperature to maintain crispness.
