- 1 cup unsweetened cocoa powder
- 1 cup sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1/2 cup semi-sweet chocolate chips
- 1 cup confectioners’ sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a mixing bowl, combine cocoa powder, sugar, and melted butter. Stir until smooth.
- Add in the eggs and vanilla extract, mixing until well incorporated.
- Fold in flour and salt until just combined.
- Pour the brownie mixture into the prepared pan, spreading it evenly.
- Bake for 20-25 minutes, until a toothpick inserted comes out with a few moist crumbs.
- Let the brownies cool completely.
- For the mousse, melt the chocolate chips over a double boiler or in the microwave.
- In another bowl, whip the heavy cream until soft peaks form. Then fold the melted chocolate into the whipped cream along with the confectioners’ sugar until fully combined.
- Spread the mousse over the cooled brownies and refrigerate until set, about 1-2 hours.
- Cut into squares and serve.
Notes
Serve with vanilla ice cream or fresh berries for enhanced flavor.
