Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine cocoa powder, sugar, and melted butter. Stir until smooth.
  3. Add in the eggs and vanilla extract, mixing until well incorporated.
  4. Fold in flour and salt until just combined.
  5. Pour the brownie mixture into the prepared pan, spreading it evenly.
  6. Bake for 20-25 minutes, until a toothpick inserted comes out with a few moist crumbs.
  7. Let the brownies cool completely.
  8. For the mousse, melt the chocolate chips over a double boiler or in the microwave.
  9. In another bowl, whip the heavy cream until soft peaks form. Then fold the melted chocolate into the whipped cream along with the confectioners’ sugar until fully combined.
  10. Spread the mousse over the cooled brownies and refrigerate until set, about 1-2 hours.
  11. Cut into squares and serve.
