- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 cup heavy cream
- 8 ounces semisweet chocolate, chopped
- 1 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Melt the butter and granulated sugar in a saucepan over medium heat, remove from heat, and let cool slightly.
- Whisk in the eggs and vanilla extract until well combined.
- Sift together the flour, cocoa powder, and salt, then stir into the butter mixture until just combined.
- Pour the brownie batter into the prepared pan and spread it evenly.
- Bake for 20-25 minutes, or until a toothpick comes out with moist crumbs.
- While brownies cool, melt the chopped chocolate in a heatproof bowl and let cool slightly.
- Whip the heavy cream until soft peaks form, gradually adding powdered sugar until stiff peaks form.
- Fold the melted chocolate into the whipped cream until combined.
- Spread the mousse over the cooled brownie layer and chill in the fridge for at least 2 hours to set.
- Cut into squares and serve.
Notes
For a dairy-free option, replace unsalted butter with coconut oil and heavy cream with coconut cream.
