  • 1/2 cup unsalted butter
  • 3 large eggs

  • 1 cup heavy cream
  • 1/2 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch baking pan.
  2. In a large bowl, melt the butter, then whisk in the cocoa powder, granulated sugar, and brown sugar until combined.
  3. Add the eggs one by one, ensuring to mix well after each addition. Stir in the vanilla extract.
  4. Gently fold in the flour and salt until just combined, being careful not to overmix.
  5. Pour the brownie batter into the prepared baking pan and spread it out evenly.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs.
  7. Allow the brownies to cool completely in the pan.
  8. For the mousse, whip the heavy cream in a separate bowl until soft peaks form.
  9. Melt the chocolate chips in a microwave-safe bowl or double boiler, then let cool slightly.
  10. Carefully fold the melted chocolate into the whipped cream until you achieve a smooth mixture.
  11. Spread the mousse over the cooled brownies and refrigerate for at least 2 hours.
  12. Once set, cut into squares and serve, perhaps adding a drizzle of chocolate ganache for an extra touch of elegance.

Notes

You can substitute unsweetened cocoa powder with Dutch-process cocoa and use coconut oil instead of butter for a dairy-free option.
