- 2 oz finely chopped milk chocolate
- 1 tbsp unsalted butter, at room temperature
- 6 large egg yolks
- 1/4 cup brown sugar
- 2 tbsp Dutch-process cocoa powder
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 tsp kosher salt
- 1 tsp vanilla extract
- Flaky salt for finishing
- Shaved chocolate for garnish
Instructions
- In a large bowl, combine the finely chopped bittersweet and milk chocolate, and add the room temperature butter on top.
- In a medium saucepan, whisk together the egg yolks, brown sugar, cocoa powder, heavy cream, whole milk, and kosher salt.
- Cook over medium-low heat, stirring constantly until the mixture thickens, about 8 to 10 minutes.
- Strain the mixture through a fine-mesh sieve into the bowl with the chocolate and let sit for a few minutes.
- Stir in the vanilla extract until well combined and smooth.
- Divide the pudding into eight small jars and refrigerate for about 3 hours until chilled and set.
- Serve chilled, topped with espresso cream, a pinch of flaky salt, and chocolate shavings.
