Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
  2. In a mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, and optional sweetener. Add baking powder and a pinch of salt, and mix until well combined.
  3. Allow the batter to sit for about 5 minutes to absorb moisture.
  4. Spoon the mixture into the prepared mini muffin pan, filling each cup almost to the brim.
  5. Bake for 18-20 minutes or until the tops are set and lightly golden.
  6. Let the bites cool briefly in the pan before transferring them to a wire rack.
  7. Enjoy warm or store for later.

Notes

For a vegan-friendly option, substitute honey with maple syrup.
