			- 1 cup cottage cheese
 - 1 cup rolled oats
 - 1/2 cup applesauce or 1 small grated apple
 - 1 large egg
 - 1/2 tsp cinnamon
 - 1 tbsp honey or maple syrup (optional)
 - 1/2 tsp baking powder
 - Pinch of salt
 
Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
 - In a mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, and optional sweetener. Add baking powder and a pinch of salt, and mix until well combined.
 - Allow the batter to sit for about 5 minutes to absorb moisture.
 - Spoon the mixture into the prepared mini muffin pan, filling each cup almost to the brim.
 - Bake for 18-20 minutes or until the tops are set and lightly golden.
 - Let the bites cool briefly in the pan before transferring them to a wire rack.
 - Enjoy warm or store for later.

For a vegan-friendly option, substitute honey with maple syrup.
