Cinnamon Roll Banana Bread

Description

A delightful blend of cinnamon rolls and banana bread, perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons cinnamon
  • 1/3 cup brown sugar
  • 2 tablespoons butter, melted (for the cinnamon swirl)
  • 1/2 cup powdered sugar (for the glaze)
  • 2 teaspoons milk or cream (for the glaze)
  • 1/4 teaspoon vanilla extract (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the melted butter, sugar, egg, and vanilla extract until well combined.
  4. Mix in the baking soda and salt, then gradually add the flour, stirring until just incorporated.
  5. In a separate bowl, combine the cinnamon, brown sugar, and 2 tablespoons of melted butter to make the cinnamon swirl mix.
  6. Pour half of the banana bread batter into the prepared loaf pan.
  7. Spoon half of the cinnamon swirl mix over the batter and gently swirl with a knife.
  8. Add the remaining banana bread batter on top, then repeat with the remaining cinnamon swirl.
  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. While the bread is baking, prepare the glaze by mixing the powdered sugar, milk, and vanilla extract until smooth.
  11. Once the bread is done, let it cool in the pan for 10 minutes, then transfer it to a wire rack.
  12. Drizzle the glaze over the warm banana bread and allow it to set before slicing.

Notes

For added texture, consider folding in chopped nuts or chocolate chips into the batter before pouring it into the loaf pan.
