- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
- ½ cup brown sugar, packed (for filling)
- 2 tsp ground cinnamon (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
- In another bowl, cream the softened butter with granulated sugar and brown sugar until fluffy—this usually takes about 2-3 minutes.
- Beat in the egg and vanilla extract until the mixture is smooth.
- Gradually mix the dry ingredients into the wet mixture until it’s just combined; avoid overmixing.
- In a small bowl, prepare the filling by mixing together the brown sugar and cinnamon.
- On a piece of parchment paper, spread half of the dough into a rectangle. Sprinkle with the filling, and carefully roll it up tightly.
- Slice the rolled dough into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the cookies are golden brown around the edges.
- Let them cool slightly before indulging!
Notes
Serve warm with a dusting of powdered sugar or drizzle of cream cheese frosting. Best enjoyed with coffee or milk.
