  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, cream the softened butter with granulated sugar and brown sugar until fluffy—this usually takes about 2-3 minutes.
  4. Beat in the egg and vanilla extract until the mixture is smooth.
  5. Gradually mix the dry ingredients into the wet mixture until it’s just combined; avoid overmixing.
  6. In a small bowl, prepare the filling by mixing together the brown sugar and cinnamon.
  7. On a piece of parchment paper, spread half of the dough into a rectangle. Sprinkle with the filling, and carefully roll it up tightly.
  8. Slice the rolled dough into rounds and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until the cookies are golden brown around the edges.
  10. Let them cool slightly before indulging!
