Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon until well blended.
- In another bowl, cream the softened butter with both granulated and brown sugars until light and fluffy.
- Beat in the egg and vanilla extract until the mixture is smooth.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- For the filling, combine the brown sugar and cinnamon in a small bowl, mixing well.
- Place half of the dough on parchment paper and spread it out evenly.
- Sprinkle the cinnamon-sugar filling over the dough and roll it up tightly.
- Slice the rolled dough into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the cookies are golden brown.
