Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon until well blended.
  3. In another bowl, cream the softened butter with both granulated and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until the mixture is smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. For the filling, combine the brown sugar and cinnamon in a small bowl, mixing well.
  7. Place half of the dough on parchment paper and spread it out evenly.
  8. Sprinkle the cinnamon-sugar filling over the dough and roll it up tightly.
  9. Slice the rolled dough into rounds and place them on a baking sheet lined with parchment paper.
  10. Bake for 10-12 minutes, or until the cookies are golden brown.
