Ingredients

  • For the Filling:
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon until fully combined.
  3. In another bowl, cream the softened butter with granulated and brown sugars until the mixture is light and fluffy.
  4. Beat in the egg and add the vanilla extract until the mixture is smooth.
  5. Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
  6. Prepare the filling by combining the brown sugar and cinnamon in a small bowl.
  7. Spread half of the dough onto a piece of parchment paper, sprinkle with the filling, then roll it up tightly from one edge.
  8. Slice the roll into rounds and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until the cookies are golden brown and fragrant.
