- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
- For the Filling:
- ½ cup brown sugar, packed
- 2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon until fully combined.
- In another bowl, cream the softened butter with granulated and brown sugars until the mixture is light and fluffy.
- Beat in the egg and add the vanilla extract until the mixture is smooth.
- Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
- Prepare the filling by combining the brown sugar and cinnamon in a small bowl.
- Spread half of the dough onto a piece of parchment paper, sprinkle with the filling, then roll it up tightly from one edge.
- Slice the roll into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the cookies are golden brown and fragrant.
Notes
These cookies can be stored in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
