Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking powder, salt, and cinnamon in a medium bowl. Set aside.
- Cream the softened butter with granulated sugar and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Prepare the filling by combining brown sugar and cinnamon in a small bowl.
- Spread half of the dough onto a sheet of parchment paper, sprinkle with the filling, and roll tightly.
- Slice the rolled dough into rounds and place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
Notes
For thicker cookies, chill the dough for 30 minutes before rolling out. Consider adding nuts or dried fruit for variations.
