Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, salt, and cinnamon in a medium bowl. Set aside.
  3. Cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Prepare the filling by combining brown sugar and cinnamon in a small bowl.
  7. Spread half of the dough onto a sheet of parchment paper, sprinkle with the filling, and roll tightly.
  8. Slice the rolled dough into rounds and place on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until the edges are golden brown.

Notes

For thicker cookies, chill the dough for 30 minutes before rolling out. Consider adding nuts or dried fruit for variations.
