Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, baking soda, baking powder, and salt, and set aside.
  3. In another large bowl, cream together the softened butter and brown sugar until fluffy.
  4. Beat in the egg and vanilla until well combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. In a small bowl, combine the ground cinnamon with a bit of sugar to create the cinnamon filling.
  7. Roll out your dough on a floured surface into a rectangle, sprinkle with the cinnamon mixture, and roll it up tightly like a log.
  8. Slice the rolled dough into cookies, placing them on the prepared baking sheet.
  9. Bake for 10-12 minutes, or until they’re golden and aromatic.
  10. For the glaze, whisk together the powdered sugar and milk until you reach your desired consistency, then drizzle over the warm cookies before serving.
