Description
Delicious pancakes with a cinnamon swirl and cream cheese glaze, combining the best of cinnamon rolls and pancakes.

- 1 cup flour (gluten-free flour blend works well)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk (any non-dairy milk is suitable)
- 1 large egg (use a flax egg for a vegan option)
- 2 tablespoons vegetable oil (or melted butter)
- 2 tablespoons melted butter
- 1/4 cup brown sugar (light or dark)
- 1 tablespoon ground cinnamon
- 4 ounces cream cheese (mascarpone is an alternative)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and brown sugar until well combined.
- In another bowl, whisk the milk, egg, vegetable oil, and melted butter together until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay.
- In a small bowl, mix the cinnamon and brown sugar together for the filling.
- Heat a non-stick skillet over medium heat. Pour about 1/4 cup of batter onto the skillet. Swirl a little cinnamon-sugar filling on top and use a toothpick to swirl it into the batter.
- Cook until bubbles form before flipping, about 2-3 minutes each side.
- In a medium bowl, combine the cream cheese, powdered sugar, and vanilla extract. Add a little milk to achieve a drizzling consistency.
- Stack the pancakes high, drizzle with glaze, and enjoy!
Notes
Serve with fresh fruit, maple syrup, chopped nuts, or whipped cream for extra indulgence. Store leftovers in the fridge or freeze for later enjoyment.
