Description

Delicious pancakes infused with cinnamon and topped with a cream cheese drizzle, blending the best of cinnamon rolls and pancakes.


Ingredients

  • 1 1/4 cup milk (regular or plant-based)
  • 2 tbsp maple syrup
  • 3 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (or gluten-free flour)
  • 3 tsp cinnamon
  • 4 tbsp softened butter (regular or plant-based)
  • 1/2 cup brown sugar or coconut sugar
  • 1/2 cup powdered sugar
  • 2 tbsp melted butter (regular or plant-based)
  • 2 oz cream cheese (regular or plant-based)

Instructions

  1. In a mixing bowl, whisk together the milk, maple syrup, vanilla extract, and melted butter.
  2. In another bowl, combine the flour, baking powder, and cinnamon. Gradually add the dry ingredients to the wet ingredients until just combined.
  3. In a small bowl, mix the softened butter with brown sugar and a touch of cinnamon to create the swirl filling.
  4. Heat a griddle or skillet over medium heat and lightly grease it.
  5. Pour about 1/4 cup of the pancake batter on the skillet. Drizzle some of the cinnamon filling over the batter before flipping the pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. For the cream cheese drizzle, mix the cream cheese with powdered sugar and a splash of milk until smooth.
  8. Serve the pancakes warm, topped with the cream cheese drizzle.

Notes

Leftovers can be stored in the refrigerator or frozen. Reheat in a toaster or microwave.
