Description

Ingredients

  • 4 tablespoons unsalted butter, softened
  • ⅓ cup brown sugar, packed
  • 1½ tablespoons all-purpose flour
  • 2½ teaspoons ground cinnamon
  • Pinch of salt
  • 1 cup unsalted butter, softened but still cool to the touch
  • 1 ⅓ cups granulated sugar
  • 1 ¾ teaspoons pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 ¾ cups all-purpose flour
  • ¾ teaspoon baking powder
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F and position an oven rack near the center. Line two baking sheets with parchment paper.
  2. Combine in a small bowl the softened butter, brown sugar, flour, cinnamon, and a pinch of salt. Mix until fully combined, then freeze this mixture for about 10 minutes.
  3. Beat the remaining softened butter and granulated sugar until light and creamy. Add the vanilla extract, egg, and egg yolk, mixing until smooth.
  4. Whisk together the flour, baking powder, cornstarch, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture and combine until just needed.
  5. Take half of the cookie dough and spread it across the bottom of the mixing bowl. Scatter small pieces of the chilled cinnamon sugar filling over the dough. Spread the remaining dough on top, gently pressing down.
  6. Fold the dough and cinnamon sugar mixture a couple of times to achieve swirls without overmixing.
  7. Use a cookie scoop to portion two-tablespoon-sized dough balls and place them on a plate. Freeze for 10 minutes to prevent spreading.
  8. Arrange the chilled dough balls on the prepared baking sheets, spacing them apart. Bake for 10-12 minutes until the edges are golden and the centers are slightly underbaked.
  9. Allow the cookies to cool on a wire rack. They will firm up as they cool, resulting in tender, soft cookies with that delightful cinnamon filling.

Notes

For added flavor, serve with vanilla ice cream or drizzle a simple glaze made from powdered sugar and milk over the cookies.
