Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar, mixing until smooth.
  3. Beat in the eggs one at a time, followed by the vanilla extract until everything is fully incorporated.
  4. In another bowl, whisk together the flour, baking powder, salt, and cinnamon. Gradually fold this dry mixture into the wet mixture until just blended.
  5. Spread the batter evenly into the prepared pan.
  6. In a small bowl, mix together the remaining sugar and ground cinnamon. Sprinkle this topping over the batter.
  7. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the blondies to cool before cutting them into squares.
