Instructions

  1. In a large pot, heat the vegetable oil over medium heat.

  3. Add the chopped onion, bell pepper, celery, and minced garlic, cooking until they soften.
  4. Stir in the chicken pieces and Cajun seasoning, cooking until the chicken is lightly browned.

  6. Season with salt and pepper as desired.
