- 2 cups cooked rice
- 1 tablespoon Cajun seasoning

Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Whisk in the flour, stirring constantly until it achieves a deep brown color, approximately 10-15 minutes.
- Add the chopped onion, bell pepper, celery, and minced garlic, cooking until they soften.
- Stir in the chicken pieces and Cajun seasoning, cooking until the chicken is lightly browned.
- Pour in the chicken broth and bring to a simmer. Let it cook for about 30-40 minutes, or until the chicken is fork-tender.
- Season with salt and pepper as desired.
- Serve over the cooked rice and garnish with chopped green onions.
