Description

A quick and easy recipe for indulgent no-bake chocolate cookies with peanut butter and oats.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup peanut butter
  • 1/4 cup unsalted butter
  • 2 teaspoons vanilla extract
  • 3 cups quick oats

Instructions

  1. In a medium saucepan over medium heat, combine the sugar, cocoa powder, milk, and butter.
  2. Stir constantly while bringing the mixture to a boil. Once boiling, let it go for 1 minute.
  3. Remove the pot from the heat. Stir in the peanut butter and vanilla until everything is smooth and combined.
  4. Add the quick oats to the mixture, stirring until they’re fully coated.
  5. Using a spoon, drop rounded tablespoonfuls of the mixture onto wax paper or a baking sheet lined with parchment.
  6. Allow the cookies to cool and set for about 30 minutes.

Notes

To keep cookies fresh, store in an airtight container at room temperature for up to a week. They can also be refrigerated or frozen for longer shelf life.
