Ingredients

  • 1 1/2 cups white sugar
  • 1 egg (or 1/4 cup applesauce for an egg substitute)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup granulated sugar for rolling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the flour, baking soda, and salt. Set aside.
  3. In a separate large bowl, cream together the softened butter and white sugar until smooth and creamy.
  4. Beat in the egg, vanilla extract, and almond extract until fully incorporated.
  5. Gradually blend in the dry ingredients until just combined.
  6. Roll rounded teaspoonfuls of the dough into balls and coat each ball in granulated sugar.
  7. Place the sugar-coated balls on ungreased cookie sheets, leaving space to spread.
  8. Bake in the preheated oven for about 8 to 10 minutes until golden brown.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
