- 1 cup coconut milk
- 1 cup jasmine or basmati rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil

- Chopped cilantro for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic. Sauté until fragrant and translucent, about 3-5 minutes.
- Season the chicken breasts with salt, pepper, and grated ginger. Then, place them into the skillet and cook until browned on both sides, approximately 5 minutes per side.
- Pour in the coconut milk and chicken broth. Bring the mixture to a gentle simmer.
- Stir in the rice. Cover the skillet, reduce the heat to low, and let it cook for 20 minutes or until the rice is tender and the liquid has been absorbed.
- Serve warm, garnished with freshly chopped cilantro.
