Description

A delightful coffee cheesecake with a rich, creamy texture and invigorating coffee flavor, perfect for any occasion.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup brewed coffee, cooled
  • 1 cup graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup cocoa powder (optional for garnish)
  • Chocolate shavings (optional for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan.
  3. In a separate bowl, beat the cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the sour cream, vanilla extract, and cooled coffee until well combined.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly.
  8. Turn off the oven and leave the cheesecake to cool inside with the door ajar for 1 hour.
  9. After an hour, remove it from the oven and refrigerate for at least 4 hours or overnight before serving.
  10. Garnish with cocoa powder and chocolate shavings if desired.

Notes

For a twist, add espresso powder for a stronger coffee flavor. Store in the refrigerator for up to 5 days.
