- 8 oz cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 cup brewed coffee, cooled
- 1 cup graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup cocoa powder (optional for garnish)
- Chocolate shavings (optional for garnish)
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan.
- In a separate bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in the sour cream, vanilla extract, and cooled coffee until well combined.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly.
- Turn off the oven and leave the cheesecake to cool inside with the door ajar for 1 hour.
- After an hour, remove it from the oven and refrigerate for at least 4 hours or overnight before serving.
- Garnish with cocoa powder and chocolate shavings if desired.
Notes
For a twist, add espresso powder for a stronger coffee flavor. Store in the refrigerator for up to 5 days.
