Ingredients

  • 2 chicken breasts, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 piece of ginger, sliced
  • 4 cups chicken broth
  • 2 carrots, sliced
  • 1 cup baby spinach
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Soak the glass noodles in hot water until soft, then drain and set aside.
  2. Heat sesame oil in a large pot over medium heat.
  3. Add chopped onion, minced garlic, and sliced ginger; sauté until fragrant.
  4. Toss in the sliced chicken and cook until browned.
  5. Pour in chicken broth, add sliced carrots, and mix in soy sauce; bring to a boil.
  6. Reduce heat and let simmer for about 10 minutes.
  7. Stir in baby spinach and cooked glass noodles; combine until heated through.
  8. Season with salt and pepper to taste and serve hot, garnished with chopped green onions.
