- 4 cups chicken broth

- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Soak the glass noodles in hot water until soft, then drain and set aside.
- Heat sesame oil in a large pot over medium heat.
- Add chopped onion, minced garlic, and sliced ginger; sauté until fragrant.
- Toss in the sliced chicken and cook until browned.
- Pour in chicken broth, add sliced carrots, and mix in soy sauce; bring to a boil.
- Reduce heat and let simmer for about 10 minutes.
- Stir in baby spinach and cooked glass noodles; combine until heated through.
- Season with salt and pepper to taste and serve hot, garnished with chopped green onions.
