- 4 boneless, skinless chicken breasts (about 2 pounds), pounded evenly
- Salt and black pepper, to taste
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 tablespoon water
- 3/4 cup finely shredded Romano cheese
- 1 cup plain breadcrumbs or panko
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1–2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- Chopped parsley, for garnish (optional)
Instructions
- Pound chicken to 1/2-inch thickness and season with salt and pepper.
- Place flour in one bowl.
- In a second bowl, beat eggs with water.
- In a third bowl, mix breadcrumbs with Romano cheese.
- Coat each chicken breast in flour, dip it in the egg mixture, then cover it with the breadcrumb-cheese mixture. Press the coating firmly onto the chicken.
- Heat olive oil and butter in a skillet over medium heat.
- Fry the chicken for about 4–5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F).
- Place cooked chicken on a paper towel-lined plate.
- Drizzle with lemon juice, sprinkle with lemon zest, and garnish with parsley if desired.
Notes
For a healthier option, consider baking the chicken instead of frying.
