Description

A cozy and delicious family dinner combining juicy chicken with the bright zest of lemon and rich Romano cheese.


Ingredients

  • 4 boneless, skinless chicken breasts (about 2 pounds), pounded evenly
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 3/4 cup finely shredded Romano cheese
  • 1 cup plain breadcrumbs or panko
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 12 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • Chopped parsley, for garnish (optional)

Instructions

  1. Pound chicken to 1/2-inch thickness and season with salt and pepper.
  2. Place flour in one bowl.
  3. In a second bowl, beat eggs with water.
  4. In a third bowl, mix breadcrumbs with Romano cheese.
  5. Coat each chicken breast in flour, dip it in the egg mixture, then cover it with the breadcrumb-cheese mixture. Press the coating firmly onto the chicken.
  6. Heat olive oil and butter in a skillet over medium heat.
  7. Fry the chicken for about 4–5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F).
  8. Place cooked chicken on a paper towel-lined plate.
  9. Drizzle with lemon juice, sprinkle with lemon zest, and garnish with parsley if desired.

Notes

For a healthier option, consider baking the chicken instead of frying.
