Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup cottage cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. Heat a skillet over medium heat with a splash of olive oil. Sear the chicken until golden brown on both sides, about 4-5 minutes each.
  4. In a baking dish, spread a layer of marinara sauce at the bottom.
  5. Place the seared chicken on top and cover the chicken with cottage cheese.
  6. Pour the rest of the marinara sauce over the cottage cheese.
  7. Top with mozzarella and Parmesan cheeses.
  8. Bake for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
