Description

A healthy, protein-packed twist on the classic Chicken Parmesan, prepared with cottage cheese and tender chicken, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup cottage cheese
  • 1 cup marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper and cook until golden on both sides (about 6-7 minutes per side). Remove and set aside.
  3. In the same skillet, lower the heat and add marinara sauce, stirring until warm.
  4. In a bowl, combine the cottage cheese with Italian seasoning, mixing well.
  5. To assemble, place the chicken in a serving bowl, layer with cottage cheese mixture, pour over the marinara sauce, and finish with mozzarella and Parmesan cheese sprinkled on top.
  6. Bake in the oven for 15-20 minutes or until the cheese is bubbly and golden.

Notes

Feel free to substitute chicken with turkey or tofu. For added flavor, try different herbs or cheeses.
