- 2 chicken breasts, boneless and skinless
- 1 cup cottage cheese
- 1 cup marinara sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper and cook until golden on both sides (about 6-7 minutes per side). Remove and set aside.
- In the same skillet, lower the heat and add marinara sauce, stirring until warm.
- In a bowl, combine the cottage cheese with Italian seasoning, mixing well.
- To assemble, place the chicken in a serving bowl, layer with cottage cheese mixture, pour over the marinara sauce, and finish with mozzarella and Parmesan cheese sprinkled on top.
- Bake in the oven for 15-20 minutes or until the cheese is bubbly and golden.
Notes
Feel free to substitute chicken with turkey or tofu. For added flavor, try different herbs or cheeses.
