- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red chili flakes
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
Instructions
- Cut the chicken thighs into bite-sized pieces. Season them with salt, pepper, smoked paprika, and red chili flakes. Let them sit for about 10–15 minutes.
- Melt the butter in a small pan over medium heat, then add the minced garlic and cook until golden.
- Stir in the Dijon mustard, lemon zest, lemon juice, parsley, and thyme. Set aside.
- Heat a skillet over medium-high heat and add olive oil. Sear the chicken pieces in batches until golden and crispy.
- Return all cooked chicken to the skillet and pour in the cowboy butter. Toss to coat and sizzle for about one minute.
- Serve hot, garnished with additional herbs or lemon wedges.
