Ingredients

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red chili flakes
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped

Instructions

  1. Cut the chicken thighs into bite-sized pieces. Season them with salt, pepper, smoked paprika, and red chili flakes. Let them sit for about 10–15 minutes.
  2. Melt the butter in a small pan over medium heat, then add the minced garlic and cook until golden.
  3. Stir in the Dijon mustard, lemon zest, lemon juice, parsley, and thyme. Set aside.
  4. Heat a skillet over medium-high heat and add olive oil. Sear the chicken pieces in batches until golden and crispy.
  5. Return all cooked chicken to the skillet and pour in the cowboy butter. Toss to coat and sizzle for about one minute.
  6. Serve hot, garnished with additional herbs or lemon wedges.
