Description

An indulgent, creamy dip combining ground beef with cheese, tomatoes, and black beans, perfect for gatherings and game nights.


Ingredients

  • 1/2 lb ground beef
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional for heat)
  • 3/4 cup pale ale
  • 1/2 cup pepper jack cheese, shredded
  • 16 oz Velveeta cheese, cubed
  • 1 (14.5 oz) can Rotel tomatoes, undrained
  • 1 cup black beans, drained and rinsed
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large skillet, brown the ground beef over medium-high heat. Once it’s cooked through, drain any excess grease.
  2. Season the beef with salt, pepper, and optional red pepper flakes for a kick.
  3. Pour in the pale ale and let it simmer until reduced by about half, approximately 4–5 minutes.
  4. Lower the heat to medium-low and add the Velveeta and pepper jack cheeses. Stir constantly until everything is melted and silky smooth.
  5. Fold in the Rotel tomatoes, black beans, red onion, and cilantro. Allow it to cook for an additional 5 minutes until everything is heated through.
  6. Serve hot with tortilla chips.

Notes

Best served hot alongside crunchy tortilla chips. Experiment with different cheeses or add toppings like jalapeños and guacamole for a personalized touch.
