Description

A warm and cheesy Tex-Mex dip perfect for gatherings and game nights, featuring melted cheeses, ground beef, and vibrant tomatoes.


Ingredients

Scale
  • 1/2 lb ground beef
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
  • 3/4 cup pale ale
  • 1/2 cup pepper jack cheese, shredded
  • 16 oz Velveeta cheese, cubed
  • 1 (14.5 oz) can Rotel tomatoes, undrained
  • 1 cup black beans, drained and rinsed
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Brown the ground beef over medium-high heat, draining excess grease.
  2. Season with salt, pepper, and red pepper flakes if desired.
  3. Pour in the pale ale and simmer until reduced by half, about 4-5 minutes.
  4. Lower the heat to medium-low and stir in the Velveeta and pepper jack cheese until melted and smooth.
  5. Mix in the undrained Rotel tomatoes, black beans, diced onion, and cilantro. Cook for another 5 minutes.
  6. Serve hot with tortilla chips.

Notes

For a creamier texture, add a splash of milk when reheating. Experiment with different cheeses and meats for variations.
