- 1 lb ground lamb or beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 1/2 cup beef or vegetable broth
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce (optional)
- Salt and pepper to taste
- 2 tbsp olive oil or butter
- 3 large potatoes, peeled and chopped
- 3 tbsp unsalted butter, softened
- 1/4 cup whole milk or cream
- Optional: a pinch of nutmeg or garlic powder
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking tray for your ramekins.
- Begin by peeling and chopping your potatoes. Place them in a pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes until tender.
- While the potatoes are cooking, heat olive oil or butter in a large skillet over medium heat. Add the chopped onions and sauté until soft and translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the ground lamb or beef. Cook it, crumbling it with a spatula until it’s beautifully browned all over (around 8 minutes). If there’s excess fat, drain it.
- Toss in the frozen peas and carrots, tomato paste, Worcestershire sauce, and broth. Let this simmer gently for about 5-7 minutes.
- Once the potatoes are tender, drain them and return them to the pot. Stir in the softened butter and milk, mashing until smooth yet fluffy.
- Now, it’s time to assemble! Spoon the meat filling evenly into each ramekin. Top with a generous layer of mashed potatoes.
- Bake in the preheated oven for 20-25 minutes until the tops are golden brown and bubbly.
Notes
Pair with a fresh salad or crusty garlic bread. Store leftovers in the fridge for up to three days.
