Ingredients

  • 1 lb ground lamb or beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1/2 cup beef or vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter
  • 3 large potatoes, peeled and chopped
  • 3 tbsp unsalted butter, softened
  • 1/4 cup whole milk or cream
  • Optional: a pinch of nutmeg or garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking tray for your ramekins.
  2. Begin by peeling and chopping your potatoes. Place them in a pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes until tender.
  3. While the potatoes are cooking, heat olive oil or butter in a large skillet over medium heat. Add the chopped onions and sauté until soft and translucent, about 5 minutes.
  4. Stir in the minced garlic and cook for another minute.
  5. Add the ground lamb or beef. Cook it, crumbling it with a spatula until it’s beautifully browned all over (around 8 minutes). If there’s excess fat, drain it.
  6. Toss in the frozen peas and carrots, tomato paste, Worcestershire sauce, and broth. Let this simmer gently for about 5-7 minutes.
  7. Once the potatoes are tender, drain them and return them to the pot. Stir in the softened butter and milk, mashing until smooth yet fluffy.
  8. Now, it’s time to assemble! Spoon the meat filling evenly into each ramekin. Top with a generous layer of mashed potatoes.
  9. Bake in the preheated oven for 20-25 minutes until the tops are golden brown and bubbly.

Notes

Pair with a fresh salad or crusty garlic bread. Store leftovers in the fridge for up to three days.
