- 1/2 lb cooked shrimp, finely chopped
- 1/2 lb cooked crab meat, shredded
- 1 cup shredded Monterey Jack cheese
- 1/2 cup cream cheese, softened
- 1/2 cup queso dip
- 1 tbsp fresh cilantro, chopped
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 8 small flour tortillas
- 2 tbsp butter or oil (for frying)
Instructions
- Combine the Filling: In a large mixing bowl, blend the chopped shrimp, shredded crab, Monterey Jack cheese, softened cream cheese, and queso dip. Add in the chopped cilantro, garlic powder, and smoked paprika, mixing until smooth and creamy.
- Assemble the Tortillas: Take about 2-3 tablespoons of the filling and place it onto a tortilla. Roll it tightly and secure with a toothpick to hold the shape.
- Fry for Crispiness: Heat butter or oil in a skillet over medium heat. Place the rolled tortillas in the skillet, frying until they’re golden brown and crispy on all sides.
- Finish and Serve: Once fried, remove the toothpicks, plate your quesitos, and drizzle warm queso over the top. Sprinkle with additional cilantro for a fresh touch.
Notes
Best served with fresh herbs, dipping sauces, and can be made ahead. Leftovers can be reheated in oven or air fryer for crispiness.
