- 6 slices of bacon, cooked and crumbled
- 1 cup shredded cheese (cheddar or your favorite)
- 6 large eggs
- 2 cups hash browns (fresh or frozen)
- 1 cup milk
- Salt and pepper to taste
- Optional: Chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk together the eggs and milk until well combined. Add salt and pepper to taste.
- In a greased baking dish, layer the hash browns evenly at the bottom.
- Sprinkle the crumbled bacon on top of the hash browns, followed by a generous layer of shredded cheese.
- Pour the egg mixture over everything in the baking dish.
- Place in the oven and bake for 30-35 minutes, or until the eggs are set and the top is golden brown.
- Once done, let it cool for a few minutes, then cut into squares and serve. Optionally, garnish with chopped green onions.
Notes
If you have leftovers, allow the casserole to cool completely, then store in an airtight container in the fridge for 3-4 days or freeze for up to 2-3 months.
