Ingredients

- 3 cups sweet corn (fresh or frozen)
- 6 strips bacon, cooked and crumbled
- 1 cup cheddar cheese, shredded
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup red onion, finely chopped
- 1/4 cup green bell pepper, finely chopped
Instructions
- In a large bowl, combine sweet corn, crumbled bacon, and cheddar cheese.
- In a separate small bowl, whisk together mayonnaise, sour cream, lime juice, sugar, salt, and pepper until smooth.
- Pour the dressing over the corn mixture and gently stir to combine everything.
- Add in the chopped red onion and green bell pepper. Mix until all the ingredients are evenly distributed.
- Chill in the refrigerator for at least one hour before serving to let the flavors meld together.
Notes
