Ingredients

  • 454g fresh green beans
  • 6 slices thick-cut bacon, chopped
  • 60g brown sugar
  • 60ml soy sauce
  • 57g unsalted butter
  • 2 cloves garlic, minced

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until bright green and slightly tender.
  2. Drain the green beans and immediately plunge them into an ice bath.
  3. In a skillet over medium heat, cook the chopped bacon until crispy. Transfer to a paper towel-lined plate, reserving 1-2 tablespoons of bacon fat in the skillet.
  4. In the same skillet, melt the butter with the reserved bacon fat. Add the minced garlic and cook for about 30 seconds, or until fragrant. Stir in the brown sugar and soy sauce, mixing until smooth and the sugar has dissolved.
  5. Place the green beans in a baking dish. Pour the sauce over the beans, add the crispy bacon, and toss to coat everything evenly.
  6. Cover the dish with foil and bake at 350°F (175°C) for 25 minutes. Remove the foil and bake for another 10 minutes to thicken the glaze.
  7. Serve warm directly from the oven.

Notes

For added flavor, sprinkle sesame seeds or sliced scallions when serving. Consider using turkey bacon for a lighter option.
