  • 4 medium sweet potatoes
  • 1 cup tart cranberries
  • 1 cup sautéed apples (approximately 2 medium apples)
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • Butter (optional, for richer flavor)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the sweet potatoes for about 45 minutes until tender.
  3. Allow them to cool slightly, then slice in half lengthwise and scoop out the insides into a bowl (leave some sweet potato flesh inside the skin).
  4. Combine the scooped sweet potato with cranberries, sautéed apples, maple syrup, cinnamon, nutmeg, salt, and pepper.
  5. Mix until all ingredients are well combined.
  6. Spoon the sweet potato mixture back into the skins.
  7. Place the filled potatoes back on the baking sheet and bake for an additional 20-25 minutes until golden and heated through.

Notes
