- 4 medium sweet potatoes
- 1 cup tart cranberries
- 1 cup sautéed apples (approximately 2 medium apples)
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Salt and pepper to taste
- Butter (optional, for richer flavor)
Instructions
- Preheat your oven to 400°F (200°C).
- Roast the sweet potatoes for about 45 minutes until tender.
- Allow them to cool slightly, then slice in half lengthwise and scoop out the insides into a bowl (leave some sweet potato flesh inside the skin).
- Combine the scooped sweet potato with cranberries, sautéed apples, maple syrup, cinnamon, nutmeg, salt, and pepper.
- Mix until all ingredients are well combined.
- Spoon the sweet potato mixture back into the skins.
- Place the filled potatoes back on the baking sheet and bake for an additional 20-25 minutes until golden and heated through.
Notes
For an exquisite presentation, drizzle with extra maple syrup and sprinkle with chopped nuts. Pairs beautifully with traditional holiday dishes.
